Let’s just jump right to the chase. How many of you have tried a “healthy” gluten free pancake recipe that promised to be fluffy, yet fell apart when you flipped it, didn’t fluff up, and ended up being a huge waste of time, waste of ingredients, and a total letdown? ME!
Being that I’ve shared in that frustration more times than I can count, I’m here to tell you…THESE HEALTHY GLUTEN FREE PANCAKES ARE ACTUALLY FLUFFY!
Another thing I love about this recipe is the fact that there aren’t a ton of ingredients. 🙂 You could easily add some vanilla to this recipe as well and I’m sure it would be delicious! I just didn’t have any on hand and they turned out great without it.
At first, I had made the recipe with a combination of almond flour and brown rice flour. Then, the day I went to make them and check exact measurements for the recipe I didn’t have enough brown rice flour and substituted that for quinoa flour and they were EVEN BETTER! Also, the macros are better with the quinoa/almond combination as far as having more protein, less carbs and sugar..However, if you don’t have quinoa flour, I would definitely try it with the brown rice flour/almond flour combination. It’s also really good! Measurements are the same just swap the flours.
We’ve now started a little family tradition that I hope lasts while my boys are growing up. Elias has deemed it “Pancake Saturday”. He loves to help me mix everything and pour it on the griddle with his little man Star Wars apron on. It’s so cute! I want him growing up knowing that there’s a healthy way to make enjoyable foods that might otherwise have nutritionally harmful or useless ingredients in them.
Enoch also decided to join the party and stood himself up on Elias’s chair. 🙂 These little guys just melt my heart. Like seriously, I can’t even stand it. Do any of you other moms actually get anxious sometimes thinking about the fact that you want to remember EVERYTHING and not forget any of these moments? It sounds so stupid, but I catch myself doing that. :/
A few tricks that I’ve found work best for making these:
- USE A GRIDDLE – I honestly haven’t tried making these in a frying pan, but so far the griddle has been absolutely rocking it.
- DO NOT OVERMIX – I tend to be the one that gets mix happy. 😛 Ya’ll, just don’t do it! I only mix these by hand enough to get everything incorporated, and they seem to turn out fluffier the less you mix them up.
- THESE FREEZE BEAUTIFULLY – For real. This is a pretty big recipe that could easily be halved. We always have a substantial amount left over, so I’ve been throwing them in a freezer bag. They reheat well! I don’t like to use the microwave, but they reheat great in one and also in a pan or toaster.
Without further ado…
ACTUALLY Fluffy Healthy Gluten Free Pancakes
(maybe I could add another word in there somewhere?)
Servings: 24 medium sized pancakes
You could easily half this recipe 🙂
3 cups Almond Milk
1 tsp Raw Honey
2 cups Quinoa Flour (I used THIS brand)
2 cups Almond Flour (I used THIS almond flour)
1/2 tsp Pink Salt
2 tsp Baking Powder
Directions: Gently mix almond milk, eggs, and honey. Don’t overmix! In another bowl mix Quinoa Flour, Almond Flour, Salt, and Baking Powder. Add the dry ingredients to the wet and mix (but not too much!). Throw these bad boys down on the griddle and BAM! Delicious, healthy, gluten free pancakes that are actually healthy, fluffy, and stand up to toppings! 🙂
3 Pancakes: Calories 313, Protein 13 grams, Carbs 25 grams, Fiber 5 grams, Sugar 2.6 grams, Fat 19 grams
